Having graduated from H.E.C, France’s top School of Management, in 1967, Jean-André Charial arrived at Baumanière at the request of his grandfather Raymond Thuilier and began work in the management and administration end of the business.

But it is in the kitchen that he found his true vocation. He set out to fulfil the three conditions required to become a true chef: going on a “cook’s tour” of some of France’s greatest kitchens, becoming trained in the strict discipline of top restaurant teams and acquiring the savoir-faire transmitted by a master chef.

He trained with some of the greatest: Pierre and Jean Troisgros, Alain Chapel, Paul Haeberlin, Paul Bocuse and Freddy Girardet. Since the death of his grandfather, Jean-André Charial is in charge of L’Oustau de Baumanière’s destiny and is continuing the development of Les Maisons de Baumanière, which his grandfather had begun in 1962 by opening La Cabro d’Or.

Between his numerous trips abroad and his work expanding and managing Les Maisons de Baumanière, Jean-André Charial still finds time to devote himself to his passion for wine. In the heart of Domaine de Lauzières, a vineyard belonging to his friend Jean-Daniel Schlaepfer, Jean-André Charial produces 8 000 bottles of “L’Affectif”, his own biodynamic wine.
