FICHE TECHNIQUE : L’AFFECTIF ROUGE 2006

Rouge AOC Les Baux de Provence

Blend: 60% Grenache, 20% Syrah, 20% Mourvèdre

Production: 7 500 bottles; Alcohol: 14.33°; pH: 3.51

Total Acidity: 3.64 g; Residual sugar: 3.3 g ; Total/free SO2: 19/46 mg/litre

Appellation: Les Baux de Provence AOC: Le Destet, 13890 MOURIES - Route D24

Viticulture: Organic farming, Ecocert & Bio-Suisse certification; old vines of Black Grenache and Syrah (at least 50 years old), trained in traditional Provencal style; Mourvèdre on a southern foothill of Les Alpilles, on very poor limestone soil with a Ph of 8.1.
Vineyard manager: François Marsille.

Vinification: Vat fermentation with no addition of exogenous yeast, pumping over, blending after malolactic fermentation; 14 months’ ageing on fine lees in medium toast French oakcasks from the Doreau cooperage; fining with fresh egg whites (2 eggs per hectolitre).
Bottling without filtration.
Vintners: Jean-André Charial & Jean-Daniel Schlaepfer.

Tasting Notes: Lovely colour with purple reflections, a fruity nose dominated by prunes, with notes of elderberries, blackberries and chocolate; good structure and complexity on the palate, with a silky texture and flavour accents of quince jam, figs and small, black fruits.

Serving Suggestions: Bring to room temperature (16 – 18° C) before serving. A good match with lamb, grilled meats and roast poultry.

Rosé AOC Les Baux de Provence

Manual Harvesting: 27 hectolitres/hectare

Blend: 30 % Counoise, 55% Grenache, 15% Cinsault

Production: 5000 bottles

Alcohol : 13.48°; pH: 3.29

Total Acidity: 3.75 g; Residual Sugar: 1.6 g; Total/free SO2: 26/63 mg/litre

Appellation: Les Baux de Provence AOC: Le Destet, 13890 MOURIES - Route D24

Viticulture: Organic farming, Ecocert & Bio-Suisse certification; old vines of Black Grenache, Cinsault and Counoise (at least 50 years old), trained in traditional Provencal (gobelet) style; Cinsault on a southern foothill of Les Alpilles, on very poor limestone soil with a pH of 8.1.
Vineyard managers: Gérard Pillon & Jean-Daniel Schlaepfer.

Vinification: Saignée method, with pre-fermentation cold maceration, fermentation with no addition of exogenous yeast, blocking of malolactic fermentation, blending and vat ageing on fine lees for 7 months, stirring of the fine lees until February, fining with micronized clay.
Bottling after filtration using cellulose pads.
Vintners: Jean-André Charial & Jean-Daniel Schlaepfer.

Tasting Notes: Lovely colour with ruby red reflections, a fruity nose dominated by sea buckthorn berries and red currants, with secondary notes of English bonbons and chutney.
Still young on the palate and slightly closed, the taste is based on berry jam and the texture is nicely punctuated by a touch of lemony acidity, with hints of blueberry compote and sweet black cherries.

Serving Suggestions: Chill well to 10 – 12° C before serving as an aperitif wine or match with fish dishes such as red mullet and meager, with tajines, country-style cold cuts and mixed salad
