Created in 1995, the appellation of Les Baux-de-Provence covers an area of about 350 hectares of vines and includes the following communes: Les Baux-de-Provence, Eygalières, Fontvieille, Maussane-les-Alpilles, Mouriès, Le Paradou, Saint Étienne du Grès and Saint-Rémy-de-Provence.
The A.O.C. area of Les Baux is one of the hottest, rainiest and early ripening wine regions of Provence.
The Soils
The appellation’s soils vary from limestone, to marl, sand mixed with gravel, some bauxite and clay.
Grape Varieties
The appellation’s main varieties are Grenache and Syrah, but also include Cabernet Sauvignon, Cinsault, Carignan, Mourvèdre and Counoise.

Authenticity, more than anything else, governs and defines the wines produced in the Baux Valley. They are “gutsy, with a strong local accent”, marked by their mineral environment, the Cretacean limestone of the Alpilles mountains. The vines are grown at the foot of the crags at 100 m altitude, in soils of rocky limestone, marl, clay and sand.
Eleven estates spread over 8 communes currently make up the Winegrowers’ Association of Les Baux.
Longtime considered by the INAO (France’s National Appellation Institute) as part of the Coteaux d’Aix-en-Provence, the vintners of Les Baux fought long and hard to have the specific character of the Alpilles area officially recognized as a separate appellation in 1995. Today, 10 estates cultivate their vines organically, to make the most of the natural qualities of their terroir.
